Shrimp and Kale Low Country Soup Recipe

I hope you and yours have had a wonderful weekend thus far. I’m finally starting to feel a little bit better though I’m far from 100%. This morning after sleeping for twelve hours, my mom and I found ourselves in the kitchen staring into an over packed refrigerator. The past few nights we’ve returned home with leftovers from each meal. Without time to catch up on any of this food we risked having a lot of it go bad today. A girl who loves her seafood, I decided to salvage the Low Country Boil leftovers first!

On the 26th my brother Ryan, hosted everyone at his home for an oyster roast and Low Country Boil. This was a new tradition for our family but hopefully one that will continue for years to follow as everyone had a blast laughing around the fire while shucking oysters and sipping cold beers. 104 100 101 I looked at the two containers of shrimp, potatoes and sausage trying to figure out what I could make when my mom suggested I try my hand at a soup. She figured that with half our family feeling under the weather it would be the perfect dinner. I always love a challenge so I quickly searched our refrigerator and pantry for ingredients before grabbing the cookbook and getting to work. I decided to start the soup with a French mirepoix base to give it flavor before layering in the additional ingredients. A French mirepoix is a trio of aromatic vegetables – onions, carrots and celery, sautéed or used raw as the flavor base for many soups.

This soup is a healthy yet hearty combination of proteins and vegetables that result in a “stick to your bones” soup that is bursting with shrimp flavor.  I hope you enjoy it as much as we did this evening! It is the perfect way to use some leftovers in your refrigerator this winter.

Savannah Sunshine

Good morning from Savannah!

Bo and I arrived in Savannah Friday around 7pm after a smooth but long day of travel. Within an hour we were sitting over the water at AJ’s Dockside enjoying fresh seafood and cold beer with both families.

045After a good night’s rest and an hour morning workout with my brother, Saturday was a day dedicated to rest and relaxation with my mom. Each year my mom and I enjoy some type of spa treatment together to decompress before the holiday celebrations begin. This year we decided on a full day package at Savannah Day Spa. The package included a facial, scrub, massage, manicure, pedicure and lunch. While the treatments were wonderful, especially the facial, I had a hard time relaxing for that long. I found my mind wandering during the treatments, thinking about all the errands that need to be done for the holidays.
009010029 028 027 023 020After spending almost all day inside on Saturday yesterday we were able to enjoy the gorgeous Savannah sunshine and 70 degree temperatures. The “kids” went out on my brother’s boat for an afternoon of cruising on the water.

Hope you are having a wonderful Monday and looking forward to some time with friends and family.

Warmth in winter – wrong or not? Do you crave cold weather or warmth over the holidays? White Christmas or white sand?

Vacation Favorite Things

Coming back from vacation is always an adjustment even if the vacation is a quick trip home to Savannah and only five days long! Unfortunately even though I was able to sleep and relax while home, my body isn’t happy and the cold I fended off the entire trip hit me full fledge this morning. I woke up at 4:15 in order to make my early morning flight and I could barely swallow at that point. After tons of water, green tea, salt water, and Airborne I spent the rest of the day at the office with a scratchy throat and a runny nose. I’m currently in bed with chicken noodle soup hoping to kick the cold with a good night’s rest!

This trip home was a mix of pure relaxation and time with my immediate and extended family spread across five days. I was lucky enough to enjoy some time with my blog buddy Victoria, catch up with my in-laws, try a few new to me restaurants, bake epic chocolate chip cookies, do some Target shopping, take a long walk on the beach with my mom, and still have plenty of time to kick my feet up and relax with a good book.

The only thing missing was Bo but unfortunately he and a good friend had plans to get a technical diving certification down in the Keys this weekend! How awesome is this picture of Bo from the wreck they explored? Notice he is carrying a 3rd tank! I can’t even imagine having to switch tanks!

I thought I’d share some links to the favorite things that I’m loving after this weekend.

A delicious lighter version of one of my favorite Summer side dishes – coleslaw!

A fun Ponte blazer that features a fun zipper detail and is affordable enough to buy in multiple colors!

Absolutely amazing salted chocolate chip cookies! Stop everything and make these immediately!

A great new mascara that thickens, curls and goes on clump free for under $6!?

If you haven’t read this book it’s time to hop on the band wagon. But, you must be warned, the first 50 pages are slow and the last half will make you want to not move until you finish!

How about you? Anything new that you’re loving and think I should check out?
