Birthday Gone Right

So while the birthday weekend didn’t start perfectly, it certainly ended well!

After our poolside adventures yesterday we spent the evening grilling outside, sipping cool drinks, watching the Olympics, and blowing out candles of course!

Dinner included rubbed and grilled baby back ribs, corn on the cob, grilled asparagus, an arugula salad topped with honey goat cheese and tomatoes, washed down with refreshing drinks ranging from spiked lemonade to dark and stormy.

After dinner we spent the rest of the evening watching the Olympics from the comfort of the sofa and blowing out candles. Scott picked up cupcakes from Brown Betty Dessert Boutique in Philadelphia which were perfect for sharing between the five of us. Bo’s favorite was the chocolate while mine was the sweet potato!

In keeping with the cooking and dining theme, we enjoyed a group brunch on the back patio this morning before Bo and I had to head back to New York City via Amtrak. The weather was perfect and the eggs were some of the best I’ve ever had! If you’re looking for a scrambled egg recipe I highly recommend eggs, sautéed shallots and garlic, along with some shredded cheddar cheese.

Brunch on the back porch was made even more interesting by deer appearances throughout the morning. Bambi was far braver than her mom who quickly ran back in the woods as soon as she saw us.

Then, our evening was made complete by two episodes of The Newsroom, a family dinner guest appearance by Theodora, a birthday toast, and a delicious dinner of Chilean Sea Bass served over sautéed shitake mushrooms and Tofu Shirataki noodles.

I really am not ready for this weekend to end but rumor has it tomorrow’s Monday and that means an early morning workout!

Easy Weeknight Dinner

For over two years, Bo and I have come up with every excuse in the book not to cook on weeknights.

I’m too tired.

It’s already 8:30.

I need to workout.

Our fridge is empty.

I don’t want to clean up.

It wasn’t until a few weeks ago, when we both seriously decided to clean up our act and take our health to the next notch that we realized a healthy dinner was only 1 pan and a few ingredients away.

OMELETS!

For the past few weeks we’ve been enjoying omelets in almost any way you can imagine. We’ve filled them to the brim with almost every ingredient imaginable revolving around a different theme each time.

  • Greek
  • Caprese
  • Italian
  • Mexican
  • With yolks
  • Half white/half yolk

Lately our favorite creations have come from leftovers such as our taco dinner or homemade Greek. We are able to sit down and enjoy a home cooked dinner within five to ten minutes of walking through the door. The meal is filling, nutritious, tasty, and easy to cleanup. You can’t ask for much more than that.

What is your favorite omelet ingredient? My favorite is spinach and feta cheese!

This and That

Wow, wonders never cease. It’s a Monday and it’s been fabulous, even though work was crazy and full of catch up due to last week’s travel. Today’s post is a bit of this and that for you.

  • Slept until 6:45am which is unheard of in this household!
  • Didn’t spend a dime today on food due to this weekend’s Costco run!
  • Packed a delicious lunch that was not only healthy but it also left me satiated.
  • Ran 3.5 miles with my work run group, including 1 mile at under an 8:45 pace!
  • Made it home in time to cook dinner for us and enjoy it with Bo!
  • I’m excited to finally try MetCon3 tomorrow morning at Equinox!

In addition to these lovely food pictures which I share with you to show how proud I am that I not only cooked but also packed a lunch, I want to share a few more things with you. None are as tasty as that tender rub with love rubbed chicken thigh, but pretty great in their own right.

1) This article is a great, quick read for any folks who work out during the hot summer months. While most of it makes sense, I’ve never thought to have a transition training period.

2) Episode #3 from our Reach the Beach adventure is posted and it’s pretty hilarious. While Monica is still my hero for logging the longest nighttime mile,  I wish I could have experienced “zen or scary dark” as Jes terms it. Also, to qualify, those miles were flown for work and personal last year.

 

3) Jackie Warner isn’t messing around. I had the opportunity to participate in a special sand workout Saturday with Jes, Cat and other health and wellness influencers in NYC thanks to Well+Good.

The workout, while only 45 minutes, left me sweating and more importantly, left my muscles sore yesterday and today. This clearly means that I worked them in a new way. (picture courtesy of Zimbio)

While I know everyone doesn’t have this opportunity, this YouTube video gives you a great 10 minute workout that uses the “power pyramid” something similar to what she did with us in the sand. I’m going to edit some of the videos and share with you later in the week but I love that she admitted that she sometimes gets bored with workouts and loves nothing more than enjoying a slice of NYC pizza when she’s in town.
