An Easy, Cheesy Dinner!

 

I had great ideas for tonight’s dinner, including an improved Greek salad and quinoa salad.

Then, I had a date with Lauren, my personal trainer. She put me through our hardest workout to date.  I sweat, grunted, and cringed my way through our session. Tonight’s workout included a few of my least favorite exercises, EVER!IMG_0801

So now, in addition to my very tight calves from yesterday’s 6 miler, the rest of my body is a quivering mess too.

When I walked through the door at 7:30, I could think about nothing other than a fast, healthy, and filling dinner! Enter, the return of cheesy, broccoli goodness!

IMG_0147-1 (640x478) A while back, I received a sample pack of Green Giant’s new boxed vegetables. No longer limited to plain and blah vegetables, I was surprised by the delicious flavor of their cheesy broccoli.

IMG_0144-1 (640x478)While this is delicious alone, it’s even better with the addition of noodles and other vegetables! I included Shiritake noodles and chopped tomatoes to the broccoli for a filling delicious dinner!

IMG_0148-1 (640x478)I really wish it was easier to find the full assortment of Green Giant’s vegetables in New York City. Due to shelf space, I can rarely find their fun new flavors and mixes including the health blends, just for one, or healthy colors.

They now have 29 different boxed vegetables that are approved by Weight Watchers as being within the 1-2 point range, even with fun additions like cheese!

A Skirt Without Hose!

 

Happy Tuesday!

New York City has finally realized that Spring has arrived! Our weather this week includes numbers like 75 and words like mostly sunny! I’m especially excited for the weekend’s sunny weather. This morning, I even had the chance to wear a skirt WITHOUT hose! I know kids, it’s the little things in life!

Today was a busy day in the office but luckily I was able to sneak out a little early for some fresh air and errands! sunnynycAs you can see, even at 7pm it was still sunny and breezy. IMG_1782

MORNING WORKOUT

My day started on an awesome foot with a personal training session. I’m amazed how far I’ve come during my month with Lauren. Each training appointment lasts an hour, including a 10 minute stretching session. While each workout includes different exercises, each one challenges me and leaves my muscles screaming and quivering. This morning our multiple lunges left my legs screaming but I realized that I no longer have a hard time finding my balance like I did a month ago. My muscles are starting to memorize movements and become more familiar with the exercises which now allows us to add more weight!

BREAKFAST

After my training session my hunger was out of control! My normal breakfast only kept me full for 3.5 hours instead of the normal 5 hours!

I munched on a handful of almonds to subside my hunger until lunch time when my co-worker Eileen was sweet enough to bring me a salad. Her concoction was a fresh change on my normal salad including vegetables like broccoli which I rarely include on my salads. It was DELICIOUS!

Tonight’s dinner was a delicious repeat from last week, the Cooking Light Shrimp Cobb Salad. This week the salad was a little different due to Whole Food’s lack of fresh shrimp. The salad is still a perfect and satiating evening meal but fresh shrimp makes a huge difference.

shrimpcobb I’m ready to curl up on the couch with Bo and this week’s 90 minute Glee episode! I have an early morning run planned and then my first trip out to Long Island!

A Great Week

It’s been a busy but great week so far! Easter is on Sunday which means some quality time with my family in New Jersey and, if the weather cooperates, I’ll get to sport my first Lilly Pulitzer dress of the season! I bought this little frock when I was home in Savannah two weeks ago!

In addition, this week has been filled with lots of healthy breakfast, lunches, and dinners including a few homemade ones!

After such a wonderful week of food, we were inspired to cook last night too! But, unlike our other meals, this one included some amazing ingredients from one of our favorite places in New York City: Grand Central Market! The market is always a convenient stop on our way home from work since the 6 train takes us through Grand Central. It includes over 20 different vendors ranging from bakeries to florists!

Last night’s ingredients created an easy, simple dinner which was ready 15 minutes after we got home. Even though it took us a few minutes to put out this crazy fire! Luckily my smart husband had the forethought to use the pot of peas to put it out since the pot smothered the fire!
