The Power of Positive Thinking

“Positive thinking is expecting, talking and visualizing with certainty what you want to achieve, as an accomplished fact.”

If you’re lucky, the great thing about living and working out with your best friend is that they can constantly serve as your exercise buddy and/or motivator. Bo and I took yesterday off from a formal workout since we had a greuling 8 mile run in Central Park on Saturday. Today I assumed i’d do 3 miles on the treadmill and some abs but Bo had a different idea.

B: “Are you ready to go for a run? I thought we’d do the bridge and central park.”
A: “That’s far and hard! I figured i’d do an easy 3 today. I think the gym is open.”
B: “If we’re really going to make a change we have to start now. We need to run outside more so we’re not surprised during our races.”

Good call! So I quickly bundled up and headed out the door with my new playlist already blasting. Our plan was to run from our apartment down to the Queensborough Bridge, over the bridge, down 61st street until we hit the park, then a mile and half along the east side of the park which would also include Cat Hill. To be honest, when we left the apartment I assumed that I wouldn’t finish. Our chosen path was filled with one HUGE hill (Queensborough Bridge) and then the hills in the park. I figured that somewhere along the way i’d get tired and turn back. That’s the great thing about having a workout partner. You can’t stop running if someone is 100 feet in front of you turning their head around every 1/4 mile to make sure you’re still there. This run was tough- no questions asked. But, I quickly started a mantra and focused on my breathing. The only bad part about the run was the fact that I was wearing WAY too much clothing. I didn’t realize how warm it was especially in the sun. But, at the end I sweat it through, sang a bit too loud, and smiled in delight when I realized that my 5 miles were done and that i’d actually kept a faster pace than normal- 9:47ish.

I hope you had a great day today regardless of whether you were able to relax and enjoy the holiday or were working hard all day!

Love your body with this healthier pancake recipe

Happy Valentine’s Day! Do you have any fun plans today either with friends or your valentine? Bo and I are savoring the long weekend and relaxing this morning at home with The Tudors. We bought Season 1 on Friday night at Best Buy and are enjoying it thus far. We’re both huge history buffs so it’s right up our ally. Keeping up with Henry’s wives is definitely difficult! Later today we’re heading into the city to shop for our Valentine’s Day meal which we’re going to cook together at home. Cooking together is one of our favorite things and since we don’t have work tomorrow we can enjoy a few glasses of wine and hopefully enjoy some more difficult than usual recipes from our favorite cookbook, The Inn at Little Washington. We may even catch a yoga class this afternoon to work out the knots from yesterday’s hilly long run!
After the wonderful night out with friends last night, Bo and I enjoyed a lazy nine hours of sleep! After plenty of sleep we decided that we should test another healthier pancake recipe this morning. Bo requested a recipe that would taste like traditional pancakes but be much healthier. I love using the ingredients we already have on hand versus using a box mix. I don’t think we’ll be buying box mixes anymore! Today’s pancakes turned out absolutely perfect. We enjoyed them with canadian bacon and warm cinnamon maple syrup! Yum!
Ingredients:

2 Egg whites
1 cup skim milk
1 tsp safflower oil/vegetable oil
1 tsp agave nectar
1 c whole wheat flour
1 tsp baking powder

Stir together dry ingredients. Add eggs, agave, milk, and oil. Stir until dry ingredients are moistened (batter may be lumpy). Cook on preheated griddle until bubbles form and edges start to dry. Flip and cook until lightly browned. I like to serve with warmed maple syrup mixed with some cinnamon.

Scrumptious Vegan Coconut Macaroons

Yesterday I had the great honor to meet and get to know Meghann and a number of wonderful fellow NYC bloggers through the NYRR Gridiron 4M race and blogger brunch. This was the perfect excuse to use my KitchenAid mixer that we received as a  wedding gift. I assumed that there would be a mixed bag at the brunch in regards to food preferences (vegetarian, pescatarian, vegan, etc). Therefore, I decided to experiment with vegan baking and agave. After navigating a few different sites and asking Bo for his opinion I opted for macaroons. I had to alter the recipes a bit as I didn’t have white flour and ran short on vanilla. But, based on the feedback Heather and Dori have posted, I think they were a great success. I hope you enjoy these as much as Bo did! This recipe is super easy to double or even triple as I did for Sunday’s occasion.

Scrumptious Vegan Coconut Macaroons
1 1/2 cups finely shredded UNSWEETENED coconut

1/2 cup whole wheat flour
1/4 tsp salt
                                                                                     1/4 cup agave nectar
                                                                                     1/2 cup water
                                                                                      1 tsp Vanilla extract
                                                                                     1/2 tsp Almond extract
Directions
Combine dry ingredients in medium bowl. Mix wet ingredients in a large measuring cup, then add to dry and mix well. Use your hands to shape into Tbsp size balls and place on a non-stick cookie sheet or parchment paper with spray. Bake at 350F for 10-13 minutes or till golden brown. The cookies will be slightly crispy out of the oven and will soften after cooling. Serves 12 hungry friends:)
Sorry for the short post tonight but i’m vegging in bed with a bad headache and hitting the sack early!
