Mexican Quinoa

Every Sunday, as I read other blogs, I am inspired to cook. I know that I’ll enjoy and benefit from having a few staples prepared in the refrigerator, but most Sundays, I never make my way into the kitchen.

Yesterday, feeling surprisingly energetic after an epic birthday party the night before, Bo and I found ourselves organizing the house from top to bottom. This was serious stuff folks. I was under the bed fighting dust bunnies and Bo was trying to organize our pantry for the hundredth time. By 4pm we had tackled the house and were actually able to sit back and relax for a bit. Then Bo mentioned the pile.

“Ashley, I’ve made a pile of all the things in the pantry I doubt you’ll ever use or duplicates. Can you go through it and throw what you don’t want out? “

I groaned and walked over, amazed at what he considered to be trash. While I salvaged some things, I did end up parting ways with a few age old tea bags and expired products. But then I saw my afternoon inspiration: three bags of quinoa. How we accumulated such a collection I’ll never know. Maybe I read this post ages ago and felt inspired to buy it? Or, maybe it was on sale at Whole Foods one week and knowing it was a protein and fiber rich grain powerhouse, I was enticed to buy it.

The important thing is that the lonely boxes inspired me to create my own recipe. I opened up our fridge to see what I could use and decided that a Mexican quinoa would be the perfect way to spice up my weekday lunches. After all, my friends at Choose Cherries gave me this adorable lunch box that was just screaming to be used.

001 So, without further adieu, I give you my Mexican quinoa recipe. I enjoyed it today atop a bed of baby spinach for lunch and the flavors amazed me. This is definitely one of those dishes that gets better the next day and can last all week. Bulked up with vegetables and protein, this recipe makes four very hearty servings that are filled with healthy nutrients, vitamins, and no artificial additives. Even the dressing I used, a Whole Foods staple of ours, is all natural!

Mexican Quinoa

Prep Time: 10 minutes

Cook Time: 15 minutes

Ingredients (4 servings)

  • 1 cup quinoa
  • 1 15.5 oz black beans, rinsed
  • 1. 15.5 can corn, drained
  • 1 red pepper, diced
  • 1 yellow pepper, diced
  • 1/2 cup Cindy’s Kitchen All Natural Tangerine Vinaigrette (available at Whole Foods)
  • 1 Tbsp olive oil
  • 1 Tbsp chili powder
  • 2 Tbsp cumin
  • Dash of salt & pepper
  • Optional: diced avocado and/or chopped cilantro

Instructions

Rinse 1 cup quinoa with water.

Combine quinoa with 1 1/2 cups water in saucepan.

Bring to a rapid boil. Reduce heat and simmer, covered, 10 to 15 minutes until all water is absorbed and quinoa is tender. Make sure that quinoa doesn’t burn by stirring once or twice during the simmering process.

Remove quinoa from the heat and let stand for 5 minutes.

Pour quinoa into a large bowl.

Add beans, corn, and peppers.

Stir together.

In a separate bowl, whisk dressing, spices, salt, pepper, and oil together.

Pour over quinoa and vegetable mixture.

Stir until thoroughly combined, ensuring that even the bottom quinoa is coated.

Serve chilled and garnish with optional avocado or cilantro.

A Blow Out Evening

Last night was the perfect way to celebrate Theodora’s 29th year; a year which I am sure will be even more fabulous than this year. It’ll be tough to beat her marathon PR, multiple half marathons within a month time frame, and a new job but I’m sure she’ll find a way!

After yesterday’s intense workouts, I was ready for an evening of fun with the gang.

We started the evening’s festivities at Dramatics NYC for blowouts since none of us are very handy with the curling iron or even a round brush. I even bought a curling iron two months ago in hopes of recreating the loose curls I leave each hair cut with and love. Please believe that the curling iron is still boxed in plastic in my closet. They took longer than expected but overall it was still a great way to kick off the evening with the ladies.

The party really got started when we arrived at Stanton Social, a great Lower East Side spot that specializes in small plates and delicious cocktails. They did a wonderful job squeezing our group of 8 in last minute upstairs in their lounge area. Even though it wasn’t on the main floor, there was still plenty of people watching, music, and atmosphere.

We followed the birthday girl’s directions and started drinking immediately.

I have a tendency to stick with my regular drinks, rarely ordering from the fun cocktail menu. But, with all the celebration and fun taking place last night, starting with anything other than a fun cocktail just seemed wrong. I ordered their lime basil gimlet (Belvedere Vodka, muddled basil, lemon syrup, and fresh lime) which was absolutely delicious. So delicious in fact that I downed two way too quickly and three of the other gals quickly switched to the gimlet for their next round.

After ordering drinks our focus quickly turned to food since we were all starving and we knew we only had an hour and half before we had to head over to Theodora’s larger birthday party.

We settled on 8 different small plates, which we shared as a table. The most impressive part was that they even had a special gluten free menu which meant we could order a few items which Shannon could enjoy as well!

Within minutes our table was overtaken by multiple small plates! Our choices included:

  • Wok charred Edamame spicy miso glaze
  • Potato & Goat Cheese Pierogies
  • Maryland Jumbo Lump Crabcake ‘Corn Dogs’ 
  • Social Mac & Cheese – chorizo, ovendried tomato
  • Red Snapper Tacos – creamy avocado, spicy mango
  • Thai Spiced Baby Back Ribs
  • Salt & Pepper Shrimp

Everything was delicious and the whole meal was pretty reasonably priced considering the amount of food and alcohol we enjoyed.

Our next stop was Jadis Wine Bar, where Gia, Theodora’s gorgeous and speedy party planner organized her birthday party. The plan was to start the evening with her closest girl friends and then end the night toasting her 29th year with a larger group of friends including the men in our lives.

The setup at Jadis was perfect, complete with a reserved section and plenty of wine and passed hors d’oeurves.

By midnight I was more than done, thanks to the liquor drinks at dinner and lots of wine. Luckily, I had the forethought to chug a coconut water as soon as we got home which I think explains my absent hangover today.

Instead of laying on the couch today fighting a headache and hangover, we were able to spend the day enjoying homemade French toast, cleaning, and catching up on thank you note writing and DVR viewing.

Rest, Run, Yoga Repeat

Happy Saturday! The weekend has finally arrived and so far it is working out to be exactly what I wanted: lots of friends, lots of exercise, and lots of rest.

Yesterday was a rest day on my workout schedule which meant that I was able to sleep until 7:30 which is the perfect way to kick off the weekend if you ask me! After a long day, Bo nor I were in the mood to go out so instead we caught up on our DVR shows, popped open a bottle of Hob Nob Pinot Noir, and used my swag from Wednesday’s Electrolux event to make dinner.

014 Clearly I was excited for dinner at home made from quality products from one of our favorite New York boutique grocer, Dean & Deluca.  Paired with Beecher’s ricotta, this was a perfect meal which was done in minutes.

019 This morning Bo and I woke up around 8 to meet the birthday girl for a ten mile run. This was Bo’s first double digit run back from injury and therefore we promised to stick together since he knew he’d be tempted to push his speed which could result in more injury.

In honor of Theodora’s birthday, I took a picture of my pre-run breakfast in the banana phone pose. Don’t worry, there was no calling it in on this run.

001My morning run partners are both far faster than I am and therefore I assumed they would end up running together while I followed a few paces behind. But, as we started running and the conversation flowed easily, I decided that I’d make it my goal to stick with them for as long as possible. This worked well when I at Mohegan Sun and figured this type of run mentality will get me more comfortable when running with faster people.  006003I’m not sure whether it was the falling snow, the surprisingly packed Central Park paths, or running into our favorite short clad speed demon but for one reason or another, this was my fasted double digit run ever! There is nothing like a 9:44 pace to make me realize that I have five more weeks to kick my butt before the half. I know I need to make sure I up the ante on my weekday runs just like I’m doing on my long runs.

Bo and Theodora even pushed me to run the full Central Park loop instead of taking the easy way out and doing one lower loop and a reservoir loop. Right now my legs hate them, but hopefully I’ll thank them on March 17th when I the National Half Marathon’s hills feel like nothing! image I was soaked to the bone by the time I got home and craved nothing more than a warm shower and comfy clothes. Unfortunately for me, my schedule had other plans. Have I told you how bad I am at making sure I have enough down time? My mom could write a dissertation on the way I overscheduled myself. Oh well.

After our brief conversation at the event, she invited me to join her at any of the numerous studios where she teaches. I’m not one to turn down an offer like this, especially when it combines yoga with a new studio I’ve yet to visit.

This morning she was leading the 11:30 Vinyasa yoga class at Clay, a boutique gym located near Union Square. This gym really is the most Zen like gym I’ve ever visited.

The yoga class itself was amazing and exactly what my  body needed. The class only had eight people which meant that Kristin was able to adjust us throughout class and ensure that we had proper position. She knew that I was a runner and therefore focused my adjustments around the hip openers.

009I’m hoping to visit CLAY more in the future so I can provide a proper review but from this one taste, I’m definitely hooked and very interested to visit more of their classes and their spa!

Now it’s time to relax a bit before going out with friends for an evening of birthday fun.
