Healthy Five Minute Chai Oatmeal

Good morning from cookie central. My mom and I have spent more than twelve hours in the kitchen together baking cookies. One of our family traditions is to for my mom and I to decorate the Christmas tree and bake cookies together each year. Even though this means that the first few days home are jam-packed, I wouldn’t have it any other way.

Instead of limiting our cookies to one or two types, we do our best to please everyone by baking each person’s favorite cookie or treat. So far, we’ve baked eight different types of desserts ranging from peanut butter blossoms, toffee bars and sugar cookies.

When you’re tempted to eat cookies for breakfast, the easiest solution is putting the flavors in your oatmeal. Yesterday morning’s breakfast was a delicious, five-minute chai cookie oatmeal.

IMG_7663Chai Cookie Oatmeal

Servings: 2

Time: 5 minutes

Ingredients:

  • 1 cup quick cooking oats
  • 1 1/2 cup hot water
  • 1/4 teaspoon salt
  • 1 tablespoon flax seed oil
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon vanilla extract
  • 2 teaspoons honey, plus more to taste
  • 1/8 teaspoon vanilla extract, optional
  • 1/8 cup chopped pecans
  • Optional 1 teaspoon brown sugar or sugar in the raw to sweeten

Instructions

Combine all ingredients together, stirring well. Once combined, either put in oven on 350 degrees for 5 minutes to warm and bake or put in microwave to bake. Divide into two servings and enjoy!

Highlights from the Weekend

Greetings from Savannah!

I sunk my teeth into this juicy burger last night after arriving in Savannah around 6pm. It was so much fun to go to Whole Foods with my dad and do some dinner shopping before my brother and mom came home from work. I don’t have them often but every now and then delicious burgers, topped with onions, mushrooms and some avocado are the perfect dinner!

Before flying down to Savannah, Bo and I enjoyed a relaxing weekend in New York.

Friday night we went to Empellon Cocina with our friends Katie and Michael. It was a fun way to catch up before we part ways for the holidays while enjoying delicious margaritas and Mexican food. Opened in 2012, the restaurant has been featured for their award-winning margaritas, James Beard award winning chef and most recently, their $45 five-course tasting menu. If you haven’t been there yet, definitely add it to your list!

After sleeping in until almost 9, we worked out together at Fhitting Room. The workout on Saturday was harder than normal as it featured five separate sets of workouts, each including two moves which you did for five minutes. The kettle bell work as well as the lateral jumps has left me sore for days!

That afternoon I met Kayla in Brooklyn Bridge Park for a frigid photo shoot. The wind gusts and cold temperatures kept us on our toes as we dashed around the park, avoiding tourists. While neither of us are experts behind the camera, it was fun to work with a friend and we each learned a thing or two while trying to capture the most flattering pictures possible.

The highlight of Saturday night was watching Meet the Patelsa hilarious documentary that is part romantic comedy and part informative as it follows the story of Ravi Patel and his search for love. Since one of my best friends is Indian it helped explain a lot about their lives.

Last but not least, yesterday morning we tried a new to us spin studio in Park Slope, Byklyn. We discovered the studio on ClassPass when we were searching for workouts within walking distance of our house. While we don’t mind going into the city to workout during the week, it’s nice to have something local on Sunday.  While the studio may not be as fancy as Soul Cycle or Flywheel, the 45-minute class was a great workout and the teacher, who was unfortunately teaching her last class, had a killer hip-hop playlist for yesterday’s Hip Hop theme ride. If you’re in Brooklyn, their new rider special is 2 classes for $15!

Friday Favorites – December 2015 Edition

Happy Friday gang! Who is ready to pop some bubbly and enjoy the weekend?

By the time you read this, my out of office message will be posted and I will officially be in vacation mode. How do you kick off vacation? I’m starting things right with a much needed manicure + pedicure, a glass of wine with a friend and then dinner at Empellon Cocina.

The next two weeks are a mix of time down in Savannah with our families, followed by a week-long staycation in Brooklyn. I have a long list of books I hope to read over the break, including this one for January’s book club meeting. This is actually my first official book club so we’ll see how it goes.

So, as you count down the minutes until the weekend begins, let’s dive into this week’s (or maybe I should say month) edition of Friday Favorites, including recipes, articles, posts and other things that caught my eye this week.

The United States and Cuba finally reached a commercial flight agreement. Maybe this means I can cross Cuba off my travel list sooner than I thought! I see history and mojitos in my future!

My black boots died a sad, death last week when I found out their zipper and the insignia were beyond repair. I’m so accustomed to wearing black boots with everything during winter months that I could barely go a week before replacing them. A Bloomingdale’s gift card made it possible to finally invest in the boots I’ve long been lusting over. After walking 40 blocks in them today, I can attest to the fact that they are not only SUPER flattering and fashionable but also comfortable!

Every year, my mom and I spend the first day that I’m home for the holidays decorating the house, baking cookies and blasting Christmas music. It is a tradition that I hope will never end. To keep things fresh, we typically add one or two new cookies into the mix of three annual favorites. Since I love Snickerdoodles and my dad loves chai tea lattes, I think this one is a no-brainer. These Chewy Chai Snickerdoodles use all the right words as chewy is the only way I like my cookies!

I went in for a quick bang trim earlier this week and walked out with a lighter, healthier, albeight shorter hairstyle than I wanted. It turns out that while long hair is gorgeous and flattering, about two of my inches were a dry and dead. Since I love picking my stylist’s brain while she’s snipping, we chatted shampoo and conditioners. It turns out that the shampoo and conditioning pair I’ve been using has way too much heavy product in it, adding unnecessary weight and buildup to my hair. While some people can use this type of product without issue, since I wash my hair daily, the result was pretty ugly. This gave me the excuse I needed to return to one of my favorite shampoos – Bumble and Bumble Gentle. Light enough to use daily but rich enough to leave my hair soft and smooth, this shampoo also smells heavenly!

Yes, I’ll admit, I was one of those people who waited for an hour yesterday, attempting to buy Adele tickets on Ticketmaster. While it’s an hour of my life I’ll never get back, I still love Adele and her music. I fell in love with her just a bit more today while reading this article about her recent weight loss. “Her regimen? “I mainly moan,” she says. Small cackle. “I’m not, like, skipping to the fucking gym. I don’t enjoy it.”  Can we give her an award for honesty and candor?

Traveling for the holidays? Stock up on these snacks before you deal with the crowds and lines at the airport. Who really wants to throw elbows for an overpriced, day-old wrap anyway?
