Beer Beef Stew Recipe

Today’s post comes from my sister-in-law, Meg and her boyfriend Russell. A dangerous combination in the kitchen, these two love whipping up healthier alternatives and testing out Paleo recipes on the weekends. When my friends at Sapporo reached out, offering samples of their beer, I initially kindly refused, knowing that it’s far too difficult to ship beer to Switzerland. But, within seconds, I realized that Meg and Russell would love using the beer as recipe inspiration. Just in time for St. Patrick’s Day, this beer beef stew recipe will warm you right up!

Happy Spring everyone! I hope it is is sunny and warm wherever you are, but here in New York, the cold weather has lingered a bit. Yesterday, Russell and I found it a bit too cold and windy for outdoor adventures but not cold enough to continue winter hibernation. So, we decided to spend the day cooking. 

This recipe takes a while but, the majority of that time, the food is in the oven. This is a great stew to make during a Netflix binge and since the new season of House of Cards is out, that’s exactly what we did.

INGREDIENTS

  • 3 tablespoons all-purpose flour
  • 1 1/2 tablespoons coconut oil
  • 1 (1-pound) boneless chuck roast, trimmed
  • 1 teaspoon salt, divided
  • 1/2 teaspoon black pepper
  • 1 cup fat-free, less-sodium beef broth
  • 4 garlic cloves, crushed
  • 1 (22-ounce) Sapporo beer
  • 1 bay leaf
  • 3-4 carrots, peeled and cut diagonally into 1/2-inch-thick slices
  • 9 ounces small turnips, peeled and cut into wedges (or one large turnip cut into chunks)
  • 1 medium onion, peeled and cut into wedges
  • 3-4 Parsnips, peeled and cut into ½-inch thick slices

 

PREPARATION

  • Preheat oven to 300°.
  • Heat oil in a Dutch oven over medium-high heat.
  • Season beef with salt and pepper. Then coat with flour.

  • Add beef to pan; cook until brown on all sides.
  • Add the broth, half of the beer, garlic, and bay leaf. Keep scraping pan to remove browned bits.
  • Bring to a boil. Cover and bake at 300° for 1 1/2 hours.

  • While the beef is in the oven, I chop all of my veggies

  • Add carrots, turnips, parsnips and onion and bake (covered) an additional 1 hour and 5 minutes or until vegetables are tender and beef is fork-tender.
  • Remove beef and vegetables from pan; discard bay leaf. Cover beef mixture; keep warm.
  • Strain the cooking liquid.
  • Put the liquid back into the Dutch oven, uncovered on the stove.
  • Bring to a simmer.
  • Add the second half of the beer and allow the liquid to reduce for 20 -30 minutes or until it has reached a consistency that you like.
  • Serve the vegetable and meat mixture in a bowl, and pour desired amount of liquid on top.

48 Hours in Zermatt

The winner for most picturesque ski area in Switzerland definitely goes to Zermatt! After enjoying a late season ski weekend in Zermatt last year, we couldn’t resist going back again this year. Gorgeous views of the iconic Matterhorn, delicious Swiss mountain food, skiing of all levels, and an adorable town, beckon many people to Zermatt each year.

This year we decided to save a bit of money and stay in Tasch versus Zermatt. Tasch is just an 11 minute train ride from Zermatt which means that as long as pay attention to the train schedule, it’s a great way to save money. Our hotel, the Swiss Budget Alpenhotel, was perfect for our weekend needs – working hi-speed wireless internet, a full breakfast each morning and just across the street from the train station. It was quite basic, but when your goal is to ski each day, you don’t need much more.

We were on the lifts earlier than usual, leaving the hotel by 9am each morning. We stayed on the Swiss side this year, versus getting lost in Italy again. We really enjoyed skiing around Glacier Paradise, Gornergrat, Sunnegga. It’s hard not to enjoy skiing when the weather report is 100% wrong. We went expecting overcast, snowy weather but instead had another weekend of Spring skiing – temperature in the 40s, blue sky, white snow and sunshine both days!

IMG_7528 IMG_7545 IMG_7532 IMG_7530After a long day of skiing, we stopped at Chez Vrony for a late, afternoon lunch.  Our friends Lauren and Ryan have raved about this restaurant for years, claiming that it is the best ski lunch they’ve had in Europe. Only accessible via ski slopes, this mountain gem did not disappoint!   IMG_7566IMG_7568[1]

We enjoyed a glass of wine on the balcony, before the fading sun and cooler temps forced us to move inside.

Our entire group was amazed by the food, enjoying a taste of everything from their menu. Bo and I shared our meals, so I was able to enjoy some of the Bloody Mary soup and the fish stew to start. For our main course, we shared their take on the meatloaf as well as the lunch winner, the lamb curry.

We skied for another hour or so before enjoying a glass of wine at what has to be the coolest mountain side shack I’ve seen. You want me to sit in a lounge chair, prop my feet up, enjoy the sunset and sip champagne? Yes please! The Champagne Bar is a great spot to pause on your way down the Sunnegga side of the mountain.

After our glass of champagne and some fabulous skier watching we headed down the mountain for après ski at Papperla Pub. At 4pm each day this spot serves its signature mulled wine and cocktails on the outside terrace and inside. At 6pm the live band take the stage, playing covers and requests from the crowd.

Our final stop of the evening was Restaurant Julen where our group had the chance to sample Swiss German cuisine in a cozy, warm atmosphere. This was our second time dining at Restaurant Julen and it was just as wonderful as we remembered. The lamb shank and rack of lamb were the winners, in our opinion, as the food was so delicious everyone thought their entree was the best.  On the side of our lamb entrees, we enjoyed cheese, in the form of raclette, as no good Swiss mountain dinner isn’t complete without a little bit of cheese.

Friday Favorites – March Edition #2

Hello and welcome to the weekend! After a longer than normal work week, we are finally on the train heading to Zermatt. Ski season is quickly coming to an end as this is our last ski weekend this year. Due to its elevation and location in Switzerland, Zermatt is one of the best places for Spring skiing as it is high enough to have snow all year round!

We went there last year and enjoyed three days of gorgeous weather. While this weekend’s weather doesn’t look quite as ideal but we’ll enjoy any bit of skiing we can and the weather never affects the igloo drinks,  après or the fun group dinners!

Bo and I discovered this extra long iPhone cord when we were replacing a few lost iPhone accessories on Amazon. It seems that at least every other month we forget a charger or adapter in hotel rooms! We are in love with the two we ordered, using in our bedroom and office area for added convenience. While our shorter cords constantly annoyed us since we were restricted to we could charge our phones, these have made life super easy! These would make the perfect birthday or Christmas gift for any iPhone users on your list!

Does your running or workout playlist need a bit of a refresh? After watching his awesome YouTube dance videos, I started following this Matt Steffanina playlist on Spotify. It’s a great mix of pop, rap and club music that will help push you a little bit further during your next workout or dance party!

I’m enjoying the kaleidoscope background below so much that I’m tempted to try and use search for a matching iPhone cover!
