Easy Weeknight Dinner

For over two years, Bo and I have come up with every excuse in the book not to cook on weeknights.

I’m too tired.

It’s already 8:30.

I need to workout.

Our fridge is empty.

I don’t want to clean up.

It wasn’t until a few weeks ago, when we both seriously decided to clean up our act and take our health to the next notch that we realized a healthy dinner was only 1 pan and a few ingredients away.

OMELETS!

For the past few weeks we’ve been enjoying omelets in almost any way you can imagine. We’ve filled them to the brim with almost every ingredient imaginable revolving around a different theme each time.

  • Greek
  • Caprese
  • Italian
  • Mexican
  • With yolks
  • Half white/half yolk

Lately our favorite creations have come from leftovers such as our taco dinner or homemade Greek. We are able to sit down and enjoy a home cooked dinner within five to ten minutes of walking through the door. The meal is filling, nutritious, tasty, and easy to cleanup. You can’t ask for much more than that.

What is your favorite omelet ingredient? My favorite is spinach and feta cheese!

    We cook breakfast for dinner at least once a week. It’s great, especially when you have no motivation to cook. Super easy and always delicious!

      Lauren- Breakfast is so easy! For some reason I don’t love all breakfast foods at dinner but omelets, especially due to their savory nature, are amazing!

    AY. MEN. When I come home from work (or working out) late at night, I don’t want to spend lots of time cooking and I DEFINITELY don’t want something too complicated. Omelettes are great! They’re so versatile, including stir-fries. Yummmm.

      Katelyn- you’re so right! Who wants to waste time in the kitchen after a long day. The idea of stir-fry is great too!

    It’s so hard to cook dinner after a long day, have you thought about sticking something in a slow cooker? I love cheese in omelets!

    We’re twins! I love spinach and feta cheese in my omelets! Feta is hands down my favorite cheese and I usually have it every day in my salads! I used to make dinner every night when I lived in Atlanta, but now that I live in NY I find I usually don’t want to cook. It’s usually more convenient and easier to grab something, plus my boyfriend and I don’t have a similar work schedule so we can’t eat dinner together during the week. But you’re right, it is healthier and I should really try to make dinner at least once a week!

    I just bought a TON of stuff at TJ’s today to make omelets and came home to this post!

    Tomorrow, I plan to do fresh mozzarella and TJ’s “bruschetta sauce.” NOMNOM

    So quick and easy, you’re absolutely right!

    I’m a big fan of omelets at any meal. A great way get some protein in. But I simply LOVE eggs. I always use Roma tomatoes, vidalia onions, spinach, tuna or salmon. So good and so easy.

      Katie, I love your idea for vidalia onions and salmon. I’ve never thought of tuna! It’s not too fishy?

    Great idea! I hate cooking meat myself (too easy to screw up) so I’m always trying to figure out other tasty sources of protein.

    I love eggs for dinner! Sometimes I saute a bunch of veggies then just add a fried egg on top and call it a day. Super easy and delicious.

    Omelets are my go tos for breakfast, lunch and dinner. I don’t spend much time in the kitchen but I have confidence in my omelet making skills. Plus I love that it packs in the protein and a way to sneak in veggies. Spinach & feta is my go to at brunches.

    I eat eggs for dinner at least once a week. My favorite add ins are veggie sausage, spinach and avocado – every once in awhile goat cheese 🙂
