Fall Breakfast Ideas: Office Edition

Each day, I’m bound to read about a delicious and beautiful breakfast creation that another blogger enjoyed. Cooked carefully over the stove top with care or warmed in the oven, many of these are not feasible on a daily basis if you eat breakfast at the office.

Some people think I’m crazy to eat both breakfast and lunch at work each day but for me it, it is really the only option. If I want to have time to enjoy a solid hour workout, shower, get dressed, and make the commute to work than I can’t spend even fifteen minutes enjoying breakfast at my kitchen table. Waking up at 5:15 is plenty early for me, thank you very much.

Instead, I’ve challenged myself to give my regular breakfasts a Fall face lift since I’ve grown tired of my normal breakfasts. The past few months have been one long repeated track of banana oats or Greek yogurt “messes.”

IMG_4195Last week’s refreshing Fall weather left me craving warm and flavorful goodness. So far I’ve only come up with two twists on the classic but would love to hear your suggestions for office breakfast upgrades as well! IMG_4641 (640x478)

Crunchy Cinnamon Oats

1/2 cup Quaker or Irish Oats

1/8 cup chopped walnuts or pecans

1 sliced banana

1/2 cup to 1 cup water or milk to reach desired thickness

1 Tsp cinnamon

1 Tsp nutmeg

1 drizzle agave or sugar free syrup

Combine first six ingredients and mix thoroughly, ensuring that all oats are moist. Drizzle agave or syrup over the oat mixture. Heat in microwave for 2 minutes, keeping a close eye to ensure the oats don’t bubble over.  Enjoy!

1/4 to 1/2 cup water or milk to reach desired thickness

1 Tsp cinnamon

1 Tsp nutmeg

1 drizzle agave or sugar free syrup

Combine first six ingredients and mix thoroughly, ensuring that all oats are moist. Drizzle agave or syrup over the oat mixture. Heat in microwave for 2 minutes, keeping a close eye to ensure the oats don’t bubble over.  While these aren’t very photogenic they are very tasty!

    I eat breakfast in the office as well.

    My breakfasts are pretty standard, some combination of greek yogurt, oatmeal, cereal, fruit, peanut butter, wheat bread and muffins on good days 🙂

    In the summer I tend to crave more yogurt/fruit, but since my office is usually cold the seasonal breakfast changes haven’t been real drastic.

    My two favorite desk breakfasts are:

    1) 1 packet plain oatmeal, greek yogurt (flavor of choice) and blueberries
    2) 1 packet plain oatmeal, a spoonful of natural peanut butter, a well mashed up banana

    My tastes definitely change with the seasons. I eat much less yogurt during the fall/winter than I do throughout the warmer months. The crunchy cinnamon oats look really good!

    Maybe you could make a breakfast quiche (eggs, turkey bacon, veggies) at the beginning of the week and then heat up a piece each morning with some fruit. When I occasionally have pancakes for dinner, I like to make extra and bring them to work with me. I warm them up and add some SF syrup & walnuts or pecans. I’m interested to see what other suggestions will be, I’m always looking for new ideas.

    My current breakfast: 2-3 slices of pumpkin cinnamon bread (thank you Pepperidge Farm!) and Sunbutter (preferably crunchy). Usually with a banana on the side.

    I don’t have time for a full breakfast – and I’m not typically hungry first thing in the morning so this seems to work for me. And I’m LOVING the pumpkin or just the regular cinnamon bread.

    I’m curious – what time do you go to bed if you wake up so early? I’d love to read a post for some tips on getting your butt out of bed. Have you always been a morning person?

    When I worked in an office I always ate breakfast at work too. I usually had oats – often with chia seeds, vanilla protein powder, sliced banana and nut butter. Sometimes I brought a pre-made breakfast cookie or overnight oats. I never bothered to bring pumpkin to stir in, but sometimes I brought pumpkin yogurt for a snac!

    I tend to eat at least breakfast and lunch at my desk – some weeks I eat dinner here as well.

    These sound like great ideas, I am especially intrigued by the pumpkin oats. My standby for the past year has been oatmeal when I get in and then a yogurt mid morning – so I am definitely looking for a way to change it up.

    I do not know how you do it! I am just not a creature of habit when it comes to oats. I used to be quite the oatmeal lover in the morning. I get tired of things pretty quickly and I continued to devour my morning oats even though i didnt want to and now cant even stand the sight of it.
    Im a savory girl anyway. But these days when i want hot cereal, i go for a bowl of grits with a smear of bummel and brown butter and a sprinkle of cabot cheddar cheese. Its one of my fave combinations!
    But when i was indulgin on oats, i added a smear of nutella with sweet strawberries. and cinnamon. you gotta have cinnamon.

    I eat breakfast and lunch at the office too and it it definitly worth the extra time in the morning!

    My favorite breakfast actually can be eaten on the go though…
    I make oat cakes:
    1/2 c rolled oats
    1 Tbsp ground flax
    2 tsp chia seeds
    splash of vanilla extract
    enough liquid egg white to hold it togeher (approx 1/4 cup)

    Mix in a bowl (sprayed with Pam or other cooking spray), and microwave for 2 mins.

    Basically a bowl of oats on the go! I often top mine with a generous smear of almond butter but sometimes i decrease the oats to 1/4 cup and add in a scoop of protein powder if I’m looking to squeeze in a little more protein in my day.

    Hm, I haven’t really thought about it- I think my breakfast choices really change depending on things that I find and can’t get enough of [aka TJ’s Mango Berry Muffins lately] 🙂 I don’t mind eating oatmeal on a hot summer day or cereal on a cool winter day…
